INGREDIENTS
1 (4 oz., 113g) Libby’s® Green Bean Vegetable Cup (drained)
4 oz soba noodles
1 c sesame oil
1 tbsp rice vinegar
1 small garlic clove (minced)
1⁄2 tsp ginger (minced)
1⁄2 tbsp soy sauce
1⁄8 c buttermilk
2 tbsp cilantro
2 tsp sesame seeds
DIRECTIONS
Bring 3 quarts of water to boil. Add 2 tablespoons of salt to water. Add soba noodles; cook according to package. Drain noodles and place in bowl. Toss with 2 tablespoons of sesame oil. Whisk rice vinegar, garlic, ginger, soy sauce, sesame oil and buttermilk in bowl.
Drain (4 oz., 113g) Libby’s® Cut Green Beans Vegetable Cup and add to noodles. Pour dressing over noodles and beans. Toss gently. Sprinkle sesame seeds over salad and serve. Salad will keep in refrigerator for two days.
